Place capsicums, onions, garlic, butter and all spices into a blender and blend until a smooth paste is achieved - about 2 minutes.

When ready to cook - squeeze the mince mixture onto 6 large flat skewers and cook over hot coals for 4-5 minutes per side.
Meanwhile make the salad. Combine tomatoes, red onion and parsley in a large bowl. Add sumac and lemon juice. Stir.
Brush bread with oil and heat on the hotplate for a minute or two
To prepare, place meat and salad on the warmed bread, top with aioli, chilli sauce or hommus. Roll it up and serve.
